Employment Status & Benefits Eligibility
  • All hourly roles may be offered as full-time or part-time positions based on business needs
  • Full-time team members are expected to work a minimum of 4 days per week
  • Part-time team members receive 1 week of paid vacation annually
  • Health, dental, and vision insurance is partially covered for hourly employees

The Role

We are hiring a butcher who understands that precision, consistency, and respect for product are essential to building a high-quality kitchen.

This role is responsible for the breakdown, preparation, and management of proteins, ensuring every cut meets our standards and supports the overall integrity of the menu.

Summary of Key Responsibilities

Responsibilities and essential job functions include but are not limited to the following:

  • Break down and portion proteins with accuracy, consistency, and attention to detail
  • Maintain quality standards for all meats and proteins used in the kitchen
  • Follow all portioning guidelines, prep standards, and kitchen procedures
  • Label, store, and rotate product properly to maintain freshness and safety
  • Ensure compliance with all food safety, sanitation, and handling procedures
  • Maintain a clean, organized, and sanitary workstation at all times
  • Assist with inventory, ordering, and product management as needed
  • Communicate product needs, shortages, or quality issues to leadership
  • Support prep and kitchen operations as needed
  • Complete opening and closing duties, including station breakdown and cleaning
  • Assist team members to ensure efficient kitchen operations
  • Attend scheduled meetings and contribute to continuous improvement

Job Description
  • Maintain consistency and quality across all protein preparation
  • Support menu execution through disciplined prep and product handling
  • Ensure proper storage and organization of all protein products
  • Maintain cleanliness and organization of butcher station and surrounding areas
  • Follow all company policies, procedures, and safety standards
  • Be available to support operational needs as directed by kitchen leadership

Required Knowledge, Skills & Abilities
  • Minimum 2 years of butchery experience required
  • Strong knife skills and understanding of protein breakdown
  • Attention to detail and consistency in portioning
  • Basic understanding of food cost and waste management
  • Knowledge of food safety, sanitation, and handling procedures
  • Ability to communicate clearly with kitchen team and leadership
  • Ability to work days, nights, weekends, and holidays
  • Ability to model and act in accordance with Noko Yaki guiding principles

Physical Requirements
  • Constant standing and movement
  • Occasional exposure to cold, heat, and kitchen environments
  • Occasional stooping, kneeling, or crouching
  • Occasional lifting or carrying up to 50 lbs
  • Frequent use of hands, wrists, and arms for precision work
  • Constant communication with team members
